The idea

Another side of Jalisco: sugarcane.

Covacha already tells the story of Jalisco through corn, the milpa, chiles and agave. For one week, we present another part of it. Pelacañas is a fresh-cane rum made at Hacienda El Carmen, in Jalisco’s Ahualulco Valley, and it reached New York thanks to Arik and Lot001 Brands, who import and support Mexican spirit makers in the U.S. Order one special, one pour or explore the full experience. Meet Gaby

Long before there was a Covacha or a bottle of Pelacañas, Cristina and Mónica were friends in Jalisco. On October 20, that friendship comes to our table.

Gaby is Mónica’s daughter and one of the founders of Pelacañas, the rum her mother created in honor of her grandmother, Martha. She’ll spend the evening with us, stopping by the tables. Ask her what harvest season feels like at Hacienda El Carmen, how fresh cane becomes rum, or which pour she’d pick tonight. Come say hola.
