The Nogada Sour

Chiles en Nogada, Reimagined in a Glass

Created by Tito Pin-Pérez for Covacha’s Fiestas Patrias season, the Nogada Sour translates the balance of Chiles en Nogada into a cocktail.

Mezcal, pear liqueur, roasted-peach and miso cordial, yuzu, and a light walnut nogada foam come together with smoke, ripe fruit, savory depth, bright acidity and a soft, creamy finish.

It is Tito Pin-Pérez’s original liquid interpretation of one of Mexico’s most distinctive seasonal dishes.

The Traditional Chiles en Nogada

One of Puebla’s most celebrated seasonal dishes arrives at Covacha on September 9.

A roasted poblano is filled with hand-chopped beef skirt steak and pork butt, slowly cooked with apricot, apple, peach, golden raisins, walnuts, almonds and spices.

It is finished with creamy walnut nogada, parsley and pomegranate, bringing together the green, white and red colors associated with Mexico’s Independence celebrations.

Served at room temperature in keeping with the tradition of the dish.

Available all day from September 9 through September 30, in limited quantities.

The Mixologist Behind the Cocktail

Tito Pin-Pérez

Mexican mixologist Tito Pin-Pérez is advising Covacha’s cocktail program. His career includes Dante in New York City, Rayo in Mexico City and Vertical in Querétaro.

For Covacha’s Fiestas Patrias season, he created the Nogada Sour, a liquid interpretation of Chiles en Nogada that carries the flavors and contrasts of the traditional dish into the bar.

When is the Nogada Sour available?

The Nogada Sour is available beginning September 1 through September 30.

When is the traditional Chiles en Nogada available?

The dish is available September 9 through September 30, all day and in limited quantities.

Is there a vegetarian version of the Chiles en Nogada?

Yes. Our vegetarian version is made with roasted cauliflower, peach, pear, golden raisins, almonds and toasted walnuts, and roasted tomato, finished with the same walnut nogada sauce. It is available for $26. This version contains dairy, in addition to walnuts and almonds.

Does the Chiles en Nogada contain allergens?

Yes. The Chiles en Nogada contains walnuts, almonds and dairy. Please notify our team of any food allergies before ordering.

Can I experience the cocktail and dish together?

Yes. Both expressions will be available together from September 9 through September 30.

Is the traditional dish blended into the cocktail?

No. The Nogada Sour is an original cocktail inspired by the flavors and balance of Chiles en Nogada.
